Indian cooking on an induction stove: a simple guide for desi kitchens in Germany
You move into a new flat, you unpack your pressure cooker and your tawa, you put them on the stove β and nothing happens. Welcome to induction. I have cooked in German kitchens for more than 20 years. Here is what you really need to know, without wasting money.

First: is your stove really induction?
Many German flats have a black glass top. Not all of them are induction. There are two kinds:

If your rental contract or the stove label says "Induktion", it is induction.
The magnet test β 10 seconds, free
Take any fridge magnet and hold it to the bottom of your pot.
Magnet falls off or sticks weakly β it will not work, or it will heat very badly.
What this means for a typical desi kitchen:
- Iron kadhai, cast iron tawa β work very well.
- Most steel pots β work if the magnet sticks. Some cheap steel from India does not.
- Aluminium pressure cooker, aluminium patila, non-stick tawa β usually do not work, unless the bottom says "induction".
- Copper, brass, clay, glass β do not work.
Look for this word or symbol on the box: "induktionsgeeignet" or a small coil symbol.
The converter plate trap
You will see a round steel plate called "Induktionsadapter". You put it under your old aluminium pot and it works. Sounds perfect.
The honest truth: it works, but slowly. The plate gets very hot, wastes a lot of electricity and can mark the glass. For one special pot you cannot replace, fine. For daily cooking, buy one or two proper induction pots instead.
Roti without a flame
This is the first question every desi family asks. On gas, you puff the phulka directly on the flame. On induction there is no flame. Do not put a wire grill on the induction β the grill does not get hot.
What works:
- The cloth method: cook both sides on a hot iron tawa. Then press the edges gently with a folded clean kitchen cloth. The roti puffs up on the tawa. It takes a few tries, then it is easy.
- A heavy cast iron tawa holds heat better than a thin one, so roti cooks evenly.
- Medium-high heat, not full power. Full power burns the outside before the inside is cooked.

Tadka and frying: induction is fast
Induction heats much faster than gas. This catches everyone the first week.
- Jeera burns in seconds on full power. Use about level 6β7 of 9, not "Boost".
- Keep everything ready next to the stove before you start: jeera, onion, ginger-garlic, masala.
- When you turn the level down, the heat drops at once β not slowly like a Ceran stove. This is good, you have real control.
- The pot must sit flat on the ring. If you lift the kadhai to toss, the stove pauses. Put it back and it continues.
- Turn the hood on before the tadka, not after. Smell and grease go into the walls and curtains fast. Steam also causes mould β see my mould guide.
Pressure cooker on induction
The classic aluminium cooker from India will not work. You have two choices:
- A stainless steel pressure cooker made for induction. Indian brands sell these too β check that the box clearly says induction. Whistle and pressure work the same as before.
- A German pressure cooker (Schnellkochtopf). Good quality, no whistle, it shows pressure with a small indicator instead. Takes a week to get used to.

Mistakes that cost money
- Sliding a heavy iron tawa on the glass. It scratches. Lift, don't slide.
- Dropping cast iron on the glass. The glass can crack, and a new top is expensive. In a rented flat, you may have to pay.
- Using a tiny pot on a big ring. Many stoves do not detect it, or heat badly. Match pot size to ring size.
- Burnt sugar or milk left on the glass. Clean it while the glass is still warm, with a glass scraper. Burnt sugar can damage the surface.
- Buying a whole new pot set at once. Do the magnet test first. You may need only two or three new pieces.
Is induction cheaper than other stoves?

No induction in your flat? A single portable induction plate is handy for students and small rooms. It plugs into a normal socket. Check your kitchen fuse first if you run it together with a kettle β two strong devices on one socket can trip it.

Does my Indian pressure cooker work on induction?
Only if it is made for induction. Most classic aluminium cookers do not. Do the magnet test on the bottom β if the magnet sticks firmly, it works.
How do I make phulka roti without a gas flame?

Why does my induction stove make a humming noise?
A light humming or buzzing is normal, especially on high power or with thin pots. Heavier pots are quieter.

Can I use my iron tawa on a glass top?
Yes, iron works very well. Just lift it β don't slide it β and never drop it on the glass.
